INTRODUCTION

With the continual progress of science and technology, with the introduction of machines, electronics - our life has become very easy. The amount of exertion that we used to do has come down tremendously. Cars and vehicles have reduced our walking requirement; lifts (escalators) in the buildings have reduced our climbing requirements; machines now allow us to clean our houses, wash our clothing, clean our utensils, household works without lot of physical efforts. For food we do not have to hunt in the jungle, for water we do not need to travel or carry weight, for talking to someone we just have to reach our phone - with almost no physical exertion.
On the other hand, our intake of foods - which are rich in fats- has gone up. With the economic prosperity and easy availability of fatty foods, more and more of us are eating butter, cheese, ice creams, oil, ghee, oil-fried sweets and snacks, cakes, pastries, biscuits and chips. With spare money we can now afford more meats - which also give us more fats. These increase our intake of calories and make us fatty.
The above two factors have contributed to the increase of the general weight of the population - specially in the economically middle and upper class. Obese or overweight people are mostly from this class. Most of the labourers and poor class do not have obesity - as they still physically exert themselves and can not afford fatty foods, which are expensive. In India and many developing countries malnutrition and undernutrition is still prevailing - specially in the lower socio-economic group.
This does not mean that everyone who is rich will be obese or overweight. A lot of factors - mainly related to ignorance - are responsible for this overweight. In our school and college level studies there is not enough education regarding food habits, food values or calories. The parents who were not educated, they encouraged the children to increase intake of fatty foods, fried sweets and ghee. The children also developed the same food habits. The prevailing cooking process using oil and ghee also contributed to this tendency of increased weight. There are educated people who have another cause of increasing weight - they have parties and dinners to attend daily. In these parties the main food remains meats, ice creams, oil- fried food, butter, milk products and so on - all contributing to over-weight. The ladies in the age of 35 to 40 years also increase weight in India - especially because their duties of raising children are almost over and the prosperity of their husbands has made them more dependent on cars and machines. They can now afford servants and rich expensive foods.
Many working people also increase weight because they do not have time to walk or be physically active. They quickly grab some food from the shops and fast food corners - most of them rich in fats.
But all these obese people want to lose weight. But they do not understand the science behind this weight gain and loss. They do not know which foods are helpful for loosing weight and which are for gaining weight. WHY THIS BOOK

I conduct training programs for heart patients - educating them about how to reverse and prevent their coronary blockages. This program is popularly known as SAAOL - or science and art of living - heart program and has spread now to all over the country. After I resigned from the All India Institute of Medical Sciences (AIIMS), New Delhi in the year 1995. I started this new concept of educating the heart patients. I decided that the first and the natural thing to do is to change the factors that has caused the heart disease. This worked wonders for the patients during my research work at the AIIMS and so I decided to spread the same to all over the country and world. Today, more than 7500 patients have joined my programs and 98% have been able to avoid complicated surgeries like bypass surgery and angioplasty.
There were fourteen major factors that we had to take care when we treated a heart patient. Besides lowering the blood pressure, blood sugar, cholesterol, triglycerides, LDL cholesterol we had to reduce their weight also. More than 70% of heart patients were overweight and they could only be treated if they lose their weight. The food habits that we advocated always had very low fat intake as we advised them “zero oil cooking”. We avoided fats from all foods and yet made them very tasty. We also gave them plenty of salads, vegetables, fibres and anti-oxidants. The patients, when they improved their angina pain and reversed their blockages, we found that they also lost lot of weight - which they could not do in the past, despite their efforts. It so happened that those who were even having normal weight also started losing weight. For them we ultimately devised a different diet to stop this decrement.
Many of these people lost 15-25 kilograms in a span of one year. It so happened that many persons started joining our Saaol heart Program only to lose weight - though they did not have any heart ailment. They learnt from us the concept of calories - intake and expenditures in our body and the zero oil cooking - used them to lose weight. When my book called “Reversing Heart Disease In Five Easy Steps ” came out for heart patients, people started following them at home. When they ultimately came to me they had already lost 5-10 kilograms - through this zero oil cooking.
Then it came to my mind - why not write a book which is only focused on losing weight? I wanted to write a book which can give a complete concept to the obese or the overweight. I feel obesity is the disease of ignorance and this book is an effort to remove this ignorance. Every person, of course, has some knowledge about diet and calories - but the knowledge will be complete only after you read the book thoroughly and read the question-answers.
This book is designed in such a way that the knowledge that you gain can be used immediately in your daily life. Our aim was to get the results - so we had to become practical. I love writing books now. Whatever I know and want my patients to understand - is in my mind. When I put them on paper, it gives a lot of satisfaction. To be able to express yourself is an art. What gives me more inspiration to write more is that I write in common man’s language. When people come and tell me that they could understand well whatever I have written, I feel like writing more.
Doctors have their own language of learning - and later on they stick to the same language. One doctor thus can easily understand each other as the basic knowledge is there in both. But when we talk to the common people, the patients, we must understand that they do not have the basic medical knowledge. So we have to talk to them in a way that they can make out and make use of it.
I conduct so many seminars - where I have to speak to the patients. My job is to educate them, train them, make the use of medical knowledge practical and applicable in their life. They learn from me and go back - try to follow what I have explained to them. When I meet them again, I get a feedback. Whatever they have learnt from me and whatever they could not - I can make out. Then I try to make those things more easy and clear, which they could not follow on the previous occasion - change my language and explanation - and next time I know the result again. I learnt the way of explanation from my thousands of patients. I could explain more lucidly and learnt to make medical knowledge easy. So, I would first like to thank all my patients who taught me the way of simplifying hardcore medical knowledge to suit them. I always learnt from them.
My colleague and our center dietician Shalini Rastogi was the lady who helped me to formulate this book. To her I would remain indebted for this book.
