I believe that a few words here will help you appreciate the life and personality of the author and the book you hold in your hand.
My first encounter with Nicola was in 1998 – it was at my first job after qualifying as a dietitian . I was working as a Product Specialist with a company that at the time was always referred to as ‘the one that makes the funny bacteria drink’.
What I always remember was how Nicola and I would scheme to ensure we had our tea breaks together - the aim being to whisper the latest office gossip over a nice cup of tea made ‘milk first’ rather than water first (our little thing). We had an accomplice too, who was very similar in personality and who willingly joined us as we became what we referred to as our ‘Patsy Team’. Having a ‘Patsy’ also became our code name for tea, chatter and laughter.
We did of course ensure that all our work was done and took great pride in this. This can be confirmed because after we all left our first jobs (at around the same time and co-incidentally, of course) Nicola soon worked her way up the ladder in every top nutrition company I could ever think of which I always admired. She was truly a hard worker with a tremendous passion for nutrition helping others to live happy, healthy lives and communicating this message wherever possible. I remember a friend of mine contacting me to say ‘wow, I just heard your friend on the radio talking about nutrition!’
Since leaving our first jobs, we were always committed to seeking out ‘ Patsys ’ in other jobs undertaken to keep the ‘ Patsying ’ alive, but alas it has never been the same as the good old days.
Over the years, Nicola and I regularly communicate about so many things including the ups and downs of our lives, seeking advice from each other and as good friends do, being there for each other in those moments when one can sometimes feel a bit vulnerable – after all, we are only human and one of the positive things humans can do is help each other. We still call each other ‘Patsy’ for a laugh and even have a Whatsapp group set up in honour. In addition we have been lifelong referees to each other – this, I am sure, is one of the reasons I am actually able to get a job – a glowing reference!
Since meeting Nicola all those years ago, she hasn’t changed – same Nicola, passionate about nutrition, full of ideas and life, someone with whom I can discuss anything – no matter how silly, and I do come out with the silliest things – but Nicola puts it politely and calls me a ‘free spirit’.

I really hope you enjoy reading Nicola’s book.

About the author
Nicola Burgher is an experienced public health nutritionist working in the field of nutrition since graduating with an Honours degree in Biomedical Science followed by a Master’s degree in Nutrition in 1997 at Kings College University, London, England. She is a registered nutritionist with the Association for Nutrition and is listed on the UK Voluntary Register of Nutritionists (UKVRN).
She began her professional career working for some of the most prominent food companies and with that background and training now continues as a nutrition expert providing guidance, strategic counsel and motivational nutrition talks to a wide range of audiences. Her experience spans nutrition strategy and policy, clinical nutrition and research, nutrition and health claims counsel, media contributions, nutrition education and training through workshops and talks.
After her father’s death from prostate cancer in 2004, Nicola embarked on the study of nutrition from a more spiritual perspective, intertwining her knowledge of nutrition science and marrying the two to launch her debut publication ‘ The Creator’s Diet, Biblical Insights for Healthy Eating’ along with her website www.nicolaburgher.com also under the banner of The Creator’s Diet to help educate and empower individuals to make informed food and lifestyle choices with a strong steer towards consuming a diet rich in whole foods. She continues to educate through public appearances, practical and interactive seminars, workshops and media interviews remaining passionate in her belief that a diet rich in whole foods coupled with basic nutrition education is key in helping reverse the current tide of diet-related diseases.
Nicola is the nutrition spokesperson for Premier Christian Radio based in London, England where she is a pioneer of healthy eating. This book is her second in The Creator’s Diet series.
Introduction
Having worked in the field of nutrition for many years, I have realised that despite so many global initiatives encouraging us to eat healthily and the science supporting the importance of diet and health, on the whole there still exists a disconnect between what we know in principle and what we do in practice.
Similarly, I have been reflecting on the huge shift that has taken place in our diets over the years. The change has been from a diet consisting primarily of whole foods to one loaded with refined and highly processed foods and drinks. As a nation we have drifted away from a whole food based diet and lifestyle with severe consequences. The trend is now more of eating out rather than cooking and eating at home with family or friends. There is now a stronger tendency to eat convenience and on-the-go foods. These foods are largely refined and highly processed alternatives with typically higher calories from fat, salt and added sugar and comparatively lower in essential nutrients for health. We seem to be moving away from planning for, purchasing and consuming diets rich in the nutrients our bodies so desperately need to function properly. Rather than consuming whole foods per se, we have learnt how to isolate individual components, concentrate them and consume them in a totally different nutrient blend over long periods of time and I truly believe this to be one of the primary reasons we are experiencing the level of dietary related ill health, disease and premature death so widespread today.
Let’s briefly examine some of the consequences and effects of our unhealthy dietary habits and lifestyles:

#1: Weight gain and obesity
Otherwise referred to as ‘ globesity ’; an escalating global epidemic of overweight and obesity. At least 2.8 million people die each year as a result of being overweight or obese; with the prevalence of obesity more than doubling since 1980. More recently, a major study reported there are now more adults in the world that are obese than underweight. It also reported that obesity had tripled in men and more than doubled in women and since 1975 had risen from 105 million to 641 million in 2014. Ironically, ‘ globesity ’ is no longer associated with just the high income countries but low and middle income countries too.
Our children are also affected by this epidemic. Childhood obesity is one of the most serious public health challenges of the 21 st Century especially as overweight children are more likely to become obese adults. They are also more likely than non-overweight children to develop diabetes and cardiovascular diseases at a younger age, which in turn is associated with a higher chance of
