Entrepreneurs have recognized any opportunities in providing a special kind of food and drink – something that will be able to withstand the weather, high humidity and not spoil too easily and cause stomach upsets or in the worst case, food poisoning.
Approach
This book is meant to encourage entrepreneurship. The picnic food business is an off-shoot of catering which grew out of the provision of the lunch buffet spread that was prepared when multi-national companies sent down their foreign experts to quickly train locals in the skills needed to work machines, manage manpower and lead teams to increase productivity.
This book is kept deliberately simple so that many would-be caterers can get a licence and supply food to families and the families can spend quality time without having to worry where to get food for their hungry children.
About the Author
Vincent A. Gabriel uses his books on the food business to spread a number of messages simply because the people in the food industry are the BEST people to implement the messages.
The most important message is to cook and prepare and sell healthy food that is defined as being:

Less oily
Less salty
Less sweet
With no MSG

no gluten
no transfats
Food’s object is HEALTH.
Equally important is for food to be affordable. Everyone living in this planet has the right to have one proper meal every day of their lives.
Food is culture. Food is heritage. Food is history. Every community must do something to keep the food rituals. It may be a simple act of eating a traditional food but when done, it reminds all especially the young of whom we are.
We must use Food to create Peace. This process starts with respect. We must respect the geographical origin of names of food that was so carefully cultivated by years, even decades, of effort.
We must respect other people’s intellectual property and the use of that asset.
Since food production is so POWERFUL we must use food to help the less fortunate. Teaching them how to produce and sell food is a basic way of achieving this purpose. I am happy that I have been able to use my books and my experience in serving you.

Introduction
An up and coming aspect of the Food and Beverage Business in Singapore is to provide food for picnics which are defined as “having a meal and/or activities outdoors, away from the air-conditioned eatery”.
Features of the Picnic Food Business
Using the mnemonic PACNIC we have the features of this business:
P acking the food in safe, hygienic way and removing the fuss of putting together all the elements of a picnic. E.g. getting the drinks, the mats, the shades and selecting the place to have the picnic.
A spirational aspects of the “picnic” as a social event is currently (2016) the norm among individuals, families and corporate trainers.
C orrect food for the time, the occasion and the event.
Another aspect is the regulation that from 15 th February 2012 all food caterers are required:
1.      To label, all food served in packed meals and buffets with the time it was ready to serve and the latest time by which the food has to be consumed. The time limit is four (4) hours.
2.      Food that is delivered to consumers must be kept at between 50°C and 60°C.
3.      The following label is required:

N ew Way of Accepting the OUTDOORS. The picnic is the direct result of the efforts of the schools and universities in encouraging the pupils in sports and games.
Also it is a reflection of the community’s efforts in developing recreational parks in the housing estates and the preservation of valuable green spaces in the nature reserves, with large pleasant places for the use of families with public amenities like water and public lighting, car parks, vending machines and toilets and garbage disposal.
Three types of spaces are popular:
Traditional: like Fort Canning Park

Historical sites: like Labrador

Niche parks: like Botanic Gardens
Indoor picnic
One operator has come up with a large space protected from the elements for people to have their picnics “Singapore” style without worrying about the day being too hot, or raining or the site being infested by ants, bees, flies or other pests
Capitalise
on the current trends:
•      Desire for family bonding time
•      Outdoor training in team building leadership
•      Set “themes” like Space organised by NTUC or electronic music festival
There is no better way to understand the current players than to look at their menus which offer insights into:
•      Their ideas of what they have tested on customers and hence what customers will want to buy for their picnic
•      What types of food are robust enough to be able to withstand some time before being consumed in the tropical heat and humidity
