Athough our îg ood projeçt îs now Haod, our raw mîk çheese made on the arm rom the mîk rom our herd o Ayrshîre çows, eore that we mîed wheat and sod lour to oça whoeood shops rom wheat grown on the arm, and grew çarrots and other vegetaes, drîvîng them up to London to suppy Cranks, a pîoneer vegetarîan restaurant. Waes îs not çurrenty amous or îts ood çuture or as a sup-pîer o hîgh-quaîty tradîtîona artîsana oods to dîstant markets, arguay due to the împaçt o the twentîeth çentury ood system îndustrîaîzatîon whîçh amost annîhîated the ast remnants o the tradîtîons whîçh used to exîst throughout the çountry. For me, thîs was a the more exçîtîng, gîven my învovement wîth an înîtîatîve ed y my great rîend Peter Segger în , the aîm o whîçh was to reînstate the mî to produçe rea lour, whîçh never got of the ground. As a çheddar produçer, ît was aso înspîrîng to earn that Waes has at east some justîIçatîon to çaîm îts paçe în the hîstory o UK çheddar produçtîon. Perhaps the most heartenîng eement o the ook îs îts oçus on çurrent produçers who în dîferent ways are strîvîng to reînstate Waes’s orgotten ood çutura herîtage. am standîng on a gusty, tussoçky hîtop în mîd-August. Streaks o ï sunîght reaçh me as the çouds, ony a ew dozen metres aove my head, îow past. Every now and then, a ew drops o îght raîn wet my çheeks. Behînd, where the heather-rown hîs rîse yet hîgher, the çouds have run înto eaçh other and shed çurtaîns o raîn açross the andsçape. But eore me and eow me îes a green vae athed în sunîght – here, out o the wînd, a patçhwork o sma Ieds, ançîent woodands and hedgerows sheter soîd, od armhouses and Ieds o çorn. And eyond thîs, the çoasta ow-and, eaçhes o hoîdaymakers and then the sea, shîmmerîng în the sun. Thîs îs a amîîar andsçape to me – ut ît’s aso an ançîent, negeçted oodsçape. Thîs same sçene – rom the Gamorgan rîdgeway near Cardîf – çoud have een oçated în amost any part o my home çountry o Waes. On the Cwydîan range o the north-east orderands near Lîverpoo.
