ASIAN SKILLET NOODLES WITH VEGETABLES
2 servings Source:Skillet Greats
8ouncesfettuccine or spaghetti 1teaspoonvegetable oil ¼cupdry sherry 1 ½teaspoonsminced garlic 1cupfrozen mixed veggies, (e.g., cauliflower,

red bell pepper and pearl onions) ½cupfrozen tiny peas 1cupsliced fresh mushrooms
2tablespoonsmirin 1teaspoondark sesame oil 2tablespoonssoy sauce
Cook pasta in rapidly boiling water, stirring often, until al dente; drain.
Meanwhile, prepare sauce: Heat oil and sherry in a medium saucepan.
Add garlic, mixed vegetables, peas, ginger and mushrooms if desired.
Cook until vegetables are tender and liquid has reduced, 5-10 minutes. Remove from heat.

Stir in mirin, sesame oil, say sauce and cooked noodles. Heat through. Serve hot.
AVOCADO KASHMIR
6 servings Source:Skillet Greats
2tablespoonsghee, --or, butter ½teaspoonground cumin ½teaspoonchili powder ½teaspoonturmeric ½teaspooncoriander
1 small onion, chopped 1 small tart apples, peeled and diced 1 can cream of celery
soup, --or--1 can cream of chicken soup, --or-
1 can cream of shrimp soup salt and pepper

2cupseggplant, chopped and cooked* 3 avocados, halved 1 lemon, juice of 1cuprice 1 ½cupswater, ----condiments-----
raisins 1 whole peanuts chutney
toasted coconut lime scallions preserved kumquats, (crumble
* or 2 cups cooked chicken or shrimp.
Heat ghee in skillet and add spices. Add onion and apple and saute until limp. Add soup, salt and pepper to taste and heat over low heat until smooth. Add eggplant (or chicken or shrimp). Place rice in 1 1/2 cups water, cover and steam until tender.
Peel avocados and rub with lemon juice to avoid discoloration. Place each half on a bed of rice on a salad plate and fill with the curry

mixture. Place condiments in separate dishes and serve at the table.
Serves 6.
AZTEC ENCHILADAS
6 servings Source:Skillet Greats
7 Eggs 2tablespoonsSkim milk 1tablespoonChicken stock 1cupCorn
¼teaspoonChili powder 4 Corn tortillas
1 Sweet red pepper rings 1 Parsley sprigs
Beat the eggs, whisk in milk. Heat stock in large skillet and add the corn. Cook 2 to 3 minutes. Stir in the eggs and sprinkle with chili powder.
Cook over low-medium heat, stirring occasionally, until the eggs are set. Place one-fourth of mixture on each tortilla. Serve garnished with pepper rings and parsley sprigs, if desired.
BABY GOAT SIMMERED WITH ALMONDS AND SAFFRON

1tablespoonButter ½cupWhole blanched almonds Generous pinch saffron threads 2 To 3 oz pancetta, in 2 thick slices, diced
1lb.Baby goat meat, cut from the leg * 1 Onion, finely chopped 2 lg Garlic cloves, minced 3 Ripe tomatoes, peeled, seeded and chopped Salt and pepper

½teaspoonDried thyme 1 Bay leaf
4 md Russet potatoes, peeled and cut into eighths
In 1 1/2-inch chunks, trimmed of any membrane or fat.
Heat butter in a non stick skillet and saute almonds in it until lightly browned.
Transfer to bowl of food processor, add saffron, and process until finely ground.
Set aside.
In the same skillet, saute pancetta until lightly cooked and transfer to a heavy saucepan. Brown meat, in 2 batches, and add to pancetta.
Saute onion until golden, adding a little more butter if necessary. to meat and stir in garlic, tomatoes, almond-saffron mixture, thyme, and bay leaf.
Season to taste with salt and pepper. Add just enough water to barely cover. Bring to a boil, reduce heat, and partly cover pan. Simmer for 1 hour, or until meat is almost done. Add potatoes, pushing them under meat, and cook for 15 minutes more, until tender (There should not be a great deal of sauce but add a little water if too dry.) Taste seasoning.
Serves 4.
PER SERVING: 545 color;es, 34 g protein, 53 carbohydrate, 24 g fat (7 g saturated), 82 mg cholesterol, 238 mg sodium, 5 g fiber.
