Description

This cookbook was originally written as a Christmas gift for my daughter, Lindsey. I worked morning, noon, and night to gather a collection of recipes from my own kitchen as well as recipes from family and friends. These recipes were Lindseys favorites, those she would request time after time. The more people I talked to about their recipes, the more people would come to me because they heard I was looking for Lindseys favorites. What started out to be just a little booklet was turning into a full-fledged cooking encyclopedia!I gave Lindsey the small, unedited version for Christmas that year, with the understanding that I needed it back so that I could put together the other recipes I had collected. I continued working on my book, and what started out as a forty-page cookbook was now over one hundred pages. This book contains a conglomeration of recipes from friends, family, and even Lindsey, as well as from me and my fianc, Curt. We have all contributed our best-loved favorite recipes. No matter who contributed the recipes, they are all contributed with love. After all, that was the original intent of my gift to my daughter. Finally I give this gift to Lindsey with all my love.

Foreword
Dear Dau ghter,
Inside, you will find a collection of recipes that I have gathered and created over the years since you were born. I now share these recipes with you, my dear Lindsey, for you to share with your children, friends, family, and generations to come. I was inspired to do this because of all the times you’ve called to ask me for the recipe for one of the dishes that I prepared for you while you were growi ng up.
I have worked many days and nights to collect these recipes from friends and family members alike, so that you can have this collection at your fingertips all in one volume. They are the creations of those who love you every bit as much as I love you. Every ingredient has been tried and tested to produce only the best results. You will remember having eaten just about every dish inside this cookbook. It is not only a cookbook but also a memory book.
Each recipe includes a short story to help jog your memory a bit. Writing this book brought back a lot of fond memories of Grandma Nell, Grandpa Frank, Grandpa Rich, and you, especially from when you were growing up. You were very inquisitive as a child and so full of love for different foods. It also has recipes from Daddy, Curt, Grandma Gaebel, and others who lov e you.
Your diagnosis of Type I Diabetes at age two, my darling Lindsey, didn’t hinder you from trying new foods. It only forced me to be more creative in how I made dishes for you, so they were a little healthier and more diabetic-friendly. That’s not to say that this is a diabetic cookbook. You, as any child, were hungry for new dishes. Yet you were open to try the unusual, so I tried new and different foods. You gobbled them up, and I thank you for that, my love.
On the top of each page, I included an aphorism or Bible verse that I thought was special. I thought you could take these quotes to heart, and I hope you like what you read. They really hit home to me, and I felt they might touch your heart as well.
Anyway, sweetheart, here is your cookbook for you to take and use in your own kitchen for your own family and friends; take it and use it with love and happiness. Make notes in it and make changes in it as you see fit to make the recipes truly your own. I love you, and I hope you enj oy it.
I’ve written this cookbook for my daughter and anyone else who can benefit from good, home cooked dishes. I’ve included sentiments with each recipe which I hope can touch your hearts as they have mine. Enjoy this book not so much as a cookbook but as a guidebook that you can keep close to your heart. Beanless Bean Dip
I made this every time your dad had his friends and family over for football parties. It’s easy to throw together, and it’s a winner at any party. Just throw everything into the slow cooker and serve with tortilla chips. Keep this one where you’ll be sure to fi nd it.

1 15-oz. can chili with no beans
1 lb. ham burger
1 lb. Velveeta cheese, cubed
 
Pro cedure 1. Place all ingredients in slow cooker. Cook on high until hamburger is cooked through, about 3 to 4 hours. Reduce setting to low until ready to serve, stirring occasio nally. 2. Serve with tortilla chips.

Buffalo Wings
This recipe is great for football or other parties. It makes about twenty-four wings. It tastes good and is easy to make. Line your broiler pan with foil, and it’s easy to clean up. I included a recipe for blue cheese dip, so you’re set, baby -doll!

2 lb. chicken wings (about 24 wings)
3 Tbs. butter, melted
6 Tbs. bottled hot pepper sauce
2 Tbs. p aprika
1/2 tsp . salt
1 Tbs. cayenne pepper
1/4 tsp. black pepper
celery sticks (opt ional)
Blue Chee se Dip
1/2 c. sour cream
1/2 c. crumbled blue cheese
1/2 c. mayo nnaise
1 1/2 Tbs. white wine vinegar or white v inegar
2 cloves garlic, minced
 
Pro cedure 1. Cut off wing tips and discard or reserve for other use, such as making stock. Cut wings apart at the joint. Put chicken wing pieces in a plastic bag. Set aside. Food safety note: When cutting raw chicken, it is best to use a cutting board just for this purpose. Wash cutting board thoroughly when finished, and do not let raw ch
