A DIFFERENT SORT OF RUMAKI

fresh uncooked medium prawns pepper bacon 1 head garlic

several lemons and limes 1teaspoondried red pepper flakes, (up to 2)
Peel and devein prawns, and place in a bowl. Peel and crush all the cloves of garlic in the head. Place garlic and red pepper flakes on top of shrimp. Squeeze enough lemon and lime juice over all to cover prawns. Marinate in refrigerator for 3 to 6 hours. You can start this in the morning and let it go all day.
After marinating, drain the prawns (if grilling outdoors, save the marinade and baste with it). Cut the bacon strips in half. Wrap the bacon around the shrimp and secure with a toothpick.
Either grill over mesquite, basting with the reserved marinade (the favored method) or broil in the oven.
You may pre-grill these and refrigerate, then warm in the broiler prior to serving. I think they taste even better that way!
Author Note: Using pepper bacon really, really does make a
difference, so use it if at all possible.
A MOLE SAUCE
1 servings Source:Mesquite Greats
2teaspoonssalt ½teaspoonpepper 1cupwater 3 large dried chilies 2 onions, chopped
Simmer for about 30 minutes **THEN ADD**

2 cloves minced garlic 2cupstomato sauce cupsugar 1teaspooncinnamon 1 1 oz sq. unsweetened chocolate
Stir until heated through and chocolate is melted, then serve on smoked beef. Garnish with fresh cilantro.
Smoke (usually uses mesquite) about six pounds of beef (flank steak, roast, whatever) with only a rub of garlic, little bit of pepper, salt, and dash of cumin... then makes a mole sauce (recipe follows), slices the beef and serves it with the sauce.
