Foreword
Mrs Leong Yee Soo belonged to the generation of Straits 'nonyas' to whom good cuisine is an article of faith and a personal challenge.
Having spent the major part of her life in thinking, talking, experimenting and teaching food preparation, Mrs Leong felt that she could contribute nothing better to society than to pass on the results of her research and experience. She did regret that the fine art of cooking is fast dying out with women taking up jobs and with instant foods, frozen dinners, snack bars and take- aways so much in evidence.
Realising the role of woman in this nuclear age, Mrs Leong planned her meals with a keen eye on the cost and quality of ingredients, time in preparation, calorie content, food value, etc. She also summoned to her aid modern kitchen equiptment and had so simplified her procedure that dabbling in the kitchen can be a source of fun.
The recipes will speak for themselves. There are household staples that have fortified the Oriental home for generations, meals for large and small groups, young and old, in and out of doors, titbits, snatched meals and feasts for special occasions.
I would recommend this book of tested recipes for every kitchen shelf, for not only is wholesome food conducive to health and happiness, but, like mother s cooking , it will be affectionately remembered and will go a long way towards fostering goodwill and happy relationships.
