Propiedades farmacológicas del Algarrobo (Hymenaea courbaril Linneaus) de interés para la industria de alimentos (Pharmacological properties of the carob tree (Hymenaea courbaril Linneaus) interesting for the food industry)

Resumen
Hymenaea courbaril L., conocido comúnmente como algarrobo, guapinol (en español), locust, jatobá o courbaril entre muchos otros, es un imponente árbol forestal que produce vainas grandes y muy duras conteniendo una pulpa de un olor penetrante pero comestible y semillas de gran tamaño. Es conocido por sus múltiples propiedades antibacteriales, antimicóticas, antiparasitarias, y nutricionales debido a sus características químicas y bromatológicas. La pulpa de su fruto tiene alto contenido de fibra rica en sustancias antioxidantes y con alta capacidad de absorción de agua. La gran cantidad de sustancias químicas que hay en las diferentes partes de esta planta la constituyen en una fuente interesante de futuras investigaciones con respecto a la obtención de conservantes naturales, compuestos con capacidad de retención de agua e ingredientes con capacidades antioxidantes, que puedan ser usados en alimentos sin que representen un riesgo potencial para la salud del consumidor.
Abstract
Hymenaea courbaril L., or carob tree, commonly known in Spanish as algarrobo, guapinol, locust, jatobá or courbaril, among many other names, is a huge forest tree that produces big and very hard pods containing a pulp with a penetrating scent, but this pulp is edible and the seeds of the fruit have a great size. It is well known because of its multiple antibacterial, antifungal, anti-parasitic and nutritional properties, based on its chemical and bromatological characteristics. The pulp of this fruit contents a fiber
rich in antioxidant substances and with a high capacity of water absorption. The great quantity of chemical
substances found in the different parts of this plant makes it to be considered as an interesting source of
future investigations, regarding the obtaining of natural preservatives, compounds with a capacity of water retention and ingredients with antioxidant capabilities that can be used in foods without any potential risk for the consumer’s health.
