Resumen
Se estudió la variabilidad de la subunidad reguladora del gen calpaína-II bovina mediante PCR-RFLP empleando la enzima de restricción HhaI. Se caracterizaron 253 bovinos, de razas europeas especializadas para carne (Hereford, Aberdeen Angus) o leche (Frisona), cebuínas (Gir, Guzerá y Nelore) y naturalizadas brasileñas (Caracú, Junqueira y Pantaneira). Dos formas alélicas fueron observadas: CAPN2A y CAPN2B. La primera fue más frecuente en las razas Hereford y Aberdeen Angus (estimación de frecuencias 0,8667 y 0,6034, respectivamente). Para las razas cebuínas y naturalizadas brasileñas, las frecuencias de CAPN2A fueron: 0,0834 y 0,4667. Se formula la hipótesis de una posible relación entre alelo CAPN2A con la terneza de la carne. Si ello es confirmado, permitirá identificar precozmente los animales de interés, favoreciendo el progreso genético de las poblaciones bovinas. Esto para el Pantaneiro y otras razas naturalizadas brasileñas, así como para las poblaciones criollas de la América del Sur, muchas de estas en proceso avanzado de extinción, podría incentivar su expansión, en función de los valores económicos que podrían ser agregados y su potencial para el mejoramiento de la palatabilidad de la carne.
Abstract
The variability of the regulatory subunit of the gene calpain-II was studied through PCR-RFLP analysis using the restriction enzyme HhaI. A total of 253 cattle of specialized European breeds to meat (Hereford, Aberdeen Angus) and milk (Friesian), as well as zebu breeds (Gyr, Guzerá, Nellore) and Brazilian naturalized breeds (Caracú, Junqueira, Pantaneira) was characterized. The two alleles identified in the study were assigned to CAPN2A and CAPN2B. The first one was more frequent in Hereford and Aberdeen Angus, whose frequencies were 0.8867 and 0.6034, respectively. For Brazilian naturalized and zebu breeds, the frequencies of CAPN2A were 0.0834 and 0.4667, respectively. We considered the hypothesis of a possible relation of CAPN2A allele with meat tenderization. If confirmed, it will allow identify the interesting animals precociously, favoring the genetic progress of the cattle populations. This for Pantaneiro and other National breeds, as well as for the Creole populations of the South America, many of these in advanced process of extinction, could stimulate its expansion, based on the economic values that could be added and its potential for the improvement of the meat tenderization.
