PERFIL MICROBIOLÓGICO DE LA CHICHA DE VENTA AMBULANTE EN BARQUISIMETO, ESTADO LARA, VENEZUELA (MICROBIOLOGICAL PROFILE OF CREAMED RICE DRINK SOLD BY STREET VENDORS IN BARQUISIMETO CITY, LARA STATE, VENEZUELA).

RESUMEN
La venta ambulante de bebidas carece de control sanitario y los vendedores las preparan y manipulan inconscientemente, lo cual origina riesgos potencialmente peligrosos para la salud. Además, estas bebidas están expuestas al contacto con la fauna de vida libre transmisora de enfermedades, cuyos nichos ecológicos se encuentran en plazas y parques del centro de la ciudad y son fuente permanente de coliformes fecales, enterobacterias patógenas y levaduras. Por tal razón, el objetivo de este estudio fue describir el perfil microbiológico de la chicha de arroz vendida y consumida en las vías públicas de la ciudad de Barquisimeto. Durante los años 2005 al 2007 se recolectaron 135 muestras al azar en el este, centro y oeste de la ciudad, correspondiente a venta ambulante y semi-ambulante, para investigar la carga de bacterias aerobias mesófilas, mohos y levaduras, el Número Más Probable de coliformes fecales y la determinación de Escherichia coli. Los resultados microbio lógicos indican que no existen diferencias significativas entre la categoría del puesto de venta pública y la zona de la ciudad donde se encuentran, para los indicadores: bacterias aerobias mesófilas, mohos y levaduras. Sin embargo, se hallaron diferencias microbiológicas significativas del Número Más Probable de Coliformes Fecales entre los puestos de venta semi-ambulantes localizados en el centro y este de la ciudad. Se concluye que la chicha de arroz consumida en Barquisimeto es una bebida elaborada con ingredientes de calidad poco conocida en lugares poco apropiados de las vías públicas de la ciudad, todo lo cual compromete su inocuidad.
ABSTRACT
The drink sale in the street does not have any sanitary control and the street vendors prepare and manipulate it unconsciously, which originates potentially dangerous health risks. In addition, these drinks are exhibited in contact with the free-living wildlife, transmitting of diseases, whose ecological niches are in places and parks of downtown and are permanent sources of faecal coliforms, pathogenic enterobacteriaceae and leavenings. For such reason, the objective of this study was to describe the microbiological profile of creamed rice drink sold and consumed in the public streets of Barquisimeto city. During years 2005 to the 2007, 135 samples were collected at random in the east, center and the west of the city, corresponding to both ambulant and semi-ambulant vendors in order to investigate the load of Aerobic Bacteria Mesophyla, moulds and leavenings, the Most Probable Number (MPN) of faecal coliforms and the determination of Escherichia coli. The microbiological results indicate that there are no significant differences between the category of the street sale and the zone of the city where they are, for the indicators: Aerobic Bacteria Mesophyla, moulds and leavenings. Nevertheless, there were significant microbiological differences of the MPN of Faecal Coliforms among the semi-ambulant vendors located in the center and east of the city. It is concluded that creamed rice drink consumed in Barquisimeto is a drink made with ingredients of little well-known quality in a few appropriate places of the streets of the city, for that reason its innocuity is not safe.
