Resumen
En el presente trabajo se analiza la mano de obra en dos modelos de producción porcina alternativa: el cerdo Ibérico en Extremadura (España) y el cerdo a campo en la provincia de Santa Fe (Argentina). Se analizan, comparan y categorizan el porcentaje de dedicación según el tipo de mano de obra, el tiempo de dedicación y la antigüedad en el proceso productivo. Se aprecian bastantes similitudes en algunos parámetros analizados, tales como el tamaño medio de las explotaciones por número de reproductoras y la antigüedad media de los titulares de las explotaciones.
Abstract
The labour of two alternative production systems: Iberian pig in Extremadura (Spain) and pig at field in Santa Fe (Argentina) is studied in this paper. The time, dedication and experience according to the type of the labour is analysed, compared and categorised. The results show that there are some similarities in some parameters like the type of labour (95 and 96 percent in Extremadura and in Santa Fe respectively, are family labour, around 33 percent are fixed labour, and around 20 percent are temporary labour), and the other hand there are differences in the demand of AWU and in the experience of the labour.
