El tipo tradicional de pavos en los EEUU es más ligero y delgado que el tipo industrial. Los pavos fueron usados en sistemas de crianza extensiva para autoconsumo y venta local. Hubo muchas variedades distintas usadas en este sistema, y casi todos llegaron a ser muy raros en años recientes. Censos de pavos cumplidos en la década 1990 revelan que poblaciones de tipos tradicionales son muy reducidas. Varias organizaciones, incluyendo la American Livestock Breeds Conservancy y Slow Foods empezaron a promover el pavo tradicional para fiestas especiales como El Día de Gracias en el cual el pavo es la comida preferida. Por estos programas la demanda para el pavo tradicional ha crecido mucho, de modo que las poblaciones de pavos tradicionales va creciendo mucho año tras año.
Abstract
Traditional turkeys in the United States are lighter and less muscular than the industrial type of bird. In the past the traditiona type was used in extensive systems for household and local meat production. There were many different varieties of traditional birds used in these systems, and nearly all of them have become extremely rare in recent year. A few different censuses of birds were completed in the 1990s, and revealed that traditional birds were quite rare. Organizations such as the American LIvestock Breeds Conservancy, and Slow Foods began to promote the traditional turkey for special occasions such as Thanksgiving, for which turkey is the preferred food. Through these promotional programs the demand for the traditional turkey as greatly increased, with the result that populations of traditional varieties of turkey have recently increased greatly from year to year.
