Resumo
A pecuária de corte nacional tem sofrido uma grande queda no seu percentual de lucratividade nos últimos anos. Isso se deve ao aumento de custo dos insumos e uma estabilização no valor da arroba. Dentro desse
contexto os produtores precisam organizar seu sistema de produção, diminuindo os custos de produção e ou aumentando a eficiência de produção através da aplicação de tecnologias no sistema de produção.
Em função disso ocorreu uma grande mudança no enfoque da pesquisa científica no ramo da nutrição animal, passando do estudo do valor nutritivo dos alimentos para o estudo dos processos fisiológicos e como esses são
afetados por diversos fatores. Nas últimas décadas, pesquisadores têm procurado manipular e melhorar a eficiência alimentar.
Abstract
The national beef cattle production has been affected for a great fall in its percentile of profitability in the last years. That is due to the increase of cost of the inputs and the stabilization in the value received. Inside of that context, the producers need to organize his production system, reducing the production costs and or increasing the production efficiency through the application of technologies in the production system. A great change in the focus of the scientific research in the branch of the animal nutrition, passing of the study of the nutritional value of the foods for the study of the physiologic processes and as those they are affected for several factors. In the last decades, researchers have been trying to manipulate and to improve the alimentary efficiency. The knowledge and the manipulation of factors that affect the corporal conditions of the beef cattle are of extreme importance, once these are directly correlated with the quality of the meat. In this context, the metabolic processes that involve the fat should have a larger prominence, due to its high cost of deposition and maintenance. This revision, therefore, has as objective approaches the influence of the energy sources, processing of grains and digestion site of starch on the fat deposition in the different parts of the body of the ruminants.
