ESTIMACIÓN DEL RENDIMIENTO Y VALOR NUTRICIONAL DEL BESOTE Joturus pichardi Poey, 1860 (Pisces: Mugilidae) (ESTIMATION OF YIELD AND NUTRITIONAL VALUE OF BOBO MULLET (Joturus pichardi Poey, 1860) (Pisces: Mugilidae))

Resumen
Objetivo. Evaluar el rendimiento eviscerado y en filete del besote (Joturus pichardi), así como la calidad nutricional y el grado de aceptación de su carne. Materiales y métodos. Se estimó el rendimiento eviscerado y en filete de 20 peces, capturados en diferentes ríos del norte de la Sierra Nevada de Santa Marta (SNSM). La longitud y el peso promedio de los peces analizados fue de 445.3 mm y 1130.7 g, respectivamente. El valor alimenticio se realizó mediante un análisis proximal. El grado de aceptación de la carne se evaluó mediante el test hedónico, encuestando a 20 personas. Resultados. Los rendimientos del pez eviscerado y en filete fueron de 92.8% y 49.5%, respectivamente. El análisis proximal indicó las siguientes contenidos: proteína 21.50%
grasa 5.30%
cenizas 1.40%
y humedad 71.70%. Esos valores indicaron un alto contenido de valor calórico (135.30 Kcal/100 g), valor proteico (15.90 g/100 Cal) y valor nutritivo (0.619/100 g) del filete. Conclusiones. Al comparar los resultados con otros estudios, el Besote demuestra tener un alto rendimiento en el filete y un excelente valor alimenticio de su carne que lo sugieren como un pez promisorio para la acuicultura de Centro América y el Gran Caribe.
Abstract
Objective. Evaluate the gutted and fillet yields of the besote (Joturus pichardi), as well as the nutritional quality and the degree of acceptance of its meat.Materials and Methods. Gutted and fillet yields were estimated on 20 fish caught in several rivers in of northern SNSM. The fish had an average length of 445.3 mm and an average weight of 1130.7 g. The nutritional value was measured using a proximal analysis. Acceptability of the meat was evaluated using the hedonic test on 20 people. Results. ash, 1.4% and moisture, 71.7%. These values provide a higher content of caloric value (135.26 Kcal/100 g), protein value (15.85 g/100 Cal) and nutritional value (0.619/100 g fillet) of filet. Conclusions. Comparing the results with other studies, bobo mullet has a high fillet yield and an excellent nutritional value suggesting it may be a promising fish for aquaculture in the Central American and Great Caribbean
