Resumen
La diversidad de factores que determinan el desecho de vacas en las explotaciones origina una heterogeneidad de las canales producidas. Las vacas gallegas muestran una predominancia de tres categorías comerciales: O-2, O-3 y P-1 (65,5 p.100 del total).
El objetivo de este trabajo es determinar la relación entre la clasificación subjetiva SEUROP y las características de las canales de las vacas de desecho.
Se utilizaron 178 vacas de raza Rubia Gallega y Holstein Friesian, anotándose su clasificación y procediéndose al despiece de la media canal izquierda
las piezas se agruparon por tipos de tejidos y por categorías comerciales. El análisis estadístico se realizó mediante el procedimiento GLM y CORR (SAS) y el test de Duncan.
La condición corporal y el peso vivo son buenos indicadores de la canal. La clasificación subjetiva de las canales (SEUROP) es buena indicadora de la composición y de los rendimientos carniceros. Los porcentajes de carne vendible rondan el 78 p.100 del peso canal, siendo mayor el de hueso y menor el de grasa para las canales más pesadas. Para la conformación se obtuvieron mejores coeficientes de correlación, con valores superiores a 0,8 que para el estado de engrasamiento, para las características generales de la canal, el porcentaje de hueso y la relación C/H.
Abstract
The diversity of factors which determine the unusable condition of the cows in the livestock production system, cause a big heterogeneity on the carcasses production. The Galician cows show a predominance of three commercial categories O-2, O-3 and P-1 (65.5 percent of the total).
The objective of this work is to determine the relation between the subjective classification (SEUROP) and the carcasses characteristics of the unusable cows.
178 cows of the Rubia Gallega and Holstein Friesian breeds were used. Carcasses were classified and the left half side of the carcass were cut
the pieces were grouped by type of tissues and by commercial categories. The statistical analysis was made using the General Linear Model (GLM) and Correlation (CORR) procedures of the SAS package and the Duncan test.
Corporal condition and liveweight of the animal are good indicators of the carcass. The subjective classification of the carcasses (SEUROP), have shown very good indicators of the composition and the meat performances of the cows. The quantity of meat that can be sold, result the 78 percent of the total carcass weight, corresponding in the heavier carcasses, the high percentage to the bone and the less one to the fat. When studying the general characteristics of the carcass, the bone percentage and the relation between meat and bone (M/B) had better correlation coefficients (with values higher than 0.8) with the conformation than with the fatness score.
